Terrina di Pollo - Chicken Terrine

Ingredients:  

- 500gr of minced chicken breast
- 200gr of thin sliced bacon
- 1 egg yolk
- 150ml of double cream
- Salt and pepper to taste

Method:

Blend the minced chicken, the egg yolk, double cream, salt and pepper.

Lay the sliced bacon in the bread baking dish.

Add the blended mixture and fold over the bacon to cover it.

Cover with aluminium foil and cook the oven in a bain-marie for 50 minutes at 200°C.

Once cooked take it out of the oven and put a pan filled with water on top of it and let it cool down.

Once cooled down, serve it sliced on bread with some salad dressed with lemon, salt and extra virgin olive oil.
