Parmesan Cheese Baskets
Ingredients:
For four baskets
- | 240g Grated Parmesan Cheese (Parmigiano Reggiano DOP) |
- | 2 Fuji Apples |
- | 80g Long Radicchio |
- | 50g Fresh Baby Spinach |
- | 15g Extra-Virgin Olive Oil |
- | Salt |
For the Balsamic Vinegar Glaze
- | 50g Balsamic Vinegar |
- | 20g Sugar Cane |
Method
For your Parmesan baskets with crunchy apple salad, start by preparing the glaze.
1 | Place the balsamic vinegar and cane sugar in a small saucepan and let it reduce over a medium heat for a few minutes. |
2 | Transfer the reduction into a bottle and put it in the fridge to harden for at least half an hour: by cooling down it will thicken and acquire the consistency of a glaze.
Then, proceed with the preparation of the baskets. |
3 | Brush a frying pan of 16-18 cm diameter with a little butter (if you have a good non-stick pan you can skip this step, but it will help to make the baskets shinier). |
4 | Heat it slightly and pour in a quarter of the Parmesan included in the recipe (60g) |
5 | Evenly spread the Parmesan in the pan, using a spatula. Then let the cheese melt, over a medium flame, until it starts making bubbles and takes on a light color. |
6 | Remove the pan from the heat and let the cheese set for a minute. |
7 | With the help of a spatula, gently remove the Parmesan wafer from the pan, (which will still be quite soft) and place it with a quick movement over an upturned small bowl, which you have previously placed on a sheet of paper towel or on a plate. Allow the basket cool down completely. |
8 | Proceed in the same way with the remaining three baskets. |
9 | When all the baskets are finished, wash the radicchio and cut it into julienne strips. Put it in a small bowl and season with some oil and salt. |
10 | Wash the apples, cut them in half and remove the core. Then cut the apples into thin slices.
Now it is time to compose the dishes. |
11 | Place each basket in a saucer and arrange the apple slices on 2/3 of the basket. Then place the spinach and radicchio. Add 3 more slices of apple on top of the remaining part of the circle. Finally garnish with a drizzle of cold balsamic vinegar glaze. |
